TERIYAKI SOBA NOODLES with TOFU and ASPARAGUS

(serves four)


ingredients

noodles
350 g soba (buckwheat) noodles
30 mL peanut oil
250 g firm tofu
2 tbsp toasted seasame oil
1 unit carrot
2 bunchesasparagus (trim off the woody base of the spears)
2 stems shallot
1/2 tsp chilli flakes (optional)
1 tbsp roasted seasame seeds
to taste salt and pepper
teriyaki sauce
60 mL dark soy sauce
60 mL rice wine vinegar
60 mL mirin (sweet rice wine)
5 mL sugar (soft dark brown dissolves best)
