(serves four)


gwaytio neua sap
500 g fresh rice sheet noodles (i can't get these in my area. instead, i use the wide, dried rice noodles, cook using packet instructions, or you can use dried rice sheet, like you would for fresh spring rolls)
2 tbsp peanut oil
3 stalks shallots, finely chopped
4 cloves garlic
500 g minced beef
250 g bean sprouts
1 tbsp light soy sauce
1 tbsp fish sauce (nam pla)
1 tsp chicken stock powder
1 tbsp preserved shredded Thai radish (this is the same stuff as the japanese yellow sushi radish)
1 tsp cornflour, mixed with a little water
1 tbsp dark soy sauce
6 leaves iceberg lettuce, roughly torn
1 bulb spring onion, finely sliced
1 bunch mint or parsley (the original recipe had corriander, but i don't like it!)
