CHINESE DUMPLINGS

(serves four)


ingredients

marinade
1/2 cup light soy sauce
1/2 cup dark soy sauce
1 tbsp apple cider vinegar
2 cloves garlic, minced
1 large onion, grated
2 tsp hot chilli powder
1 tbsp soft brown sugar (the darker the better)
filling
1 kg 'stir-fry' beef (beef that's already been cut up conveniently - get good quality beef, not only does this taste better, but makes it easier to prepare because the sinewy and fatty bits are already trimmed off)
pastry
2-3 packs gow gee pastry (round; nowadays found in the supermarkets, though you may find you have to go to an asian grocer to source your pastry - each pack contains 30 pre-cut ready-to-fill pastry thingies) alternatively you can make your own if you know how (i don't!)
dipping sauce
1/2 cup light soy sauce
1/2 cup dark soy sauce
2 tsp apple cider vinegar
1 clove garlic, minced
1 each green and red chilli, finely sliced
1/2 tbsp soft brown sugar (the darker the better)
side
1 cucumber
1 tub greek style yoghurt
